What Is Lechon?
Lechon is one of the most popular Filipino dishes, traditionally consisting of a whole pig that is slow roasted for several hours until the skin becomes crispy while the meat remains tender and juicy. This contrast in the texture between the skin and meat is what makes lechon so popular. The word lechon comes from the Spanish word lechón, meaning "roast suckling pig.”
Today, lechon is often the centerpiece of many Filipino celebrations. Preparing a whole roasted pig is often reserved for milestones, making it a memorable addition to any event.
Lechon Kawali:
While traditional lechon is a great main course for your event, lechon kawali is the perfect bite-sized form of this dish. In contrast to a whole lechon, lechon kawali is made by simmering pork belly and deep-frying it, resulting in the same flavor of traditional lechon, but in individual pieces that are easy for guests to enjoy. Lechon kawali is perfect for buffet tables, cocktail hours, family style meals, and events where serving a whole roasted pig may not be practical.
